I hosted my first Freezer Meal Workshop on Saturday and we all had a blast! Seriously, I can not wait to do this again. Although we’ve already eaten 3 of the meals, so at this rate I’m going to need to host one every other week!

The meals are so yummy with so much flavor! And the best part… my kids have all complimented the food. Win!

As I sit here looking out the window at nothing but white, I’m grateful that I do not have to take any kids to school today. Oy! If we get any more snow, the drifts at the end of my driveway will be so big that I won’t be able to see to get OUT of the driveway! I’ll be stuck here until spring! There is hope. I do see higher temperatures later this week. :-)

Onto the Menu Plan…

MONDAY – Crock Pot Coq au Vin with gf noodles, and bell pepper strips

TUESDAYLentil Soup with raw, cut veggies

WEDNESDAY – Tacos/Taco Salads

THURSDAY – Using up some chicken strips from the freezer, served with mashed potatoes & mixed veggies

FRIDAY – Homemade Pizza (Going to try making some pizza crust with my new Bread for Life Starter. We’re hoping that this will be able to replace some of our gluten free items. Will keep you posted as to our results.)

SATURDAY – Cheeseburger Soup (recipe to follow based on THIS recipe)

SUNDAYEasy Breakfast Casserole with Waffles (using Bread for Life Starter) & fruit

Here’s my CHEESEBURGER SOUP recipe:

1 lb ground beef

1 lb ground turkey

6 oz potatoes, peeled & diced

1 c chopped cauliflower

1 c chopped onions

1 c chopped celery

2 c chopped cabbage

1 c frozen green beans

1 c frozen peas

4 – 6 c water

1 can tomato sauce

1 c diced tomatoes, processed to break up tomato chunks

1 bay leaf

1/2 tsp each basil & thyme

salt & pepper to taste

1. Brown beef & turkey in dutch oven; drain fat.

2. While meat is browning chop veggies. (I love using my Progessive Fruit and Vegetable Chopper for this)

3. Add everything (except for frozen veggies) to the pot & bring to boiling. Reduce heat to low & simmer 1-4 hours.

4. Before serving remove your bay leaf & add your frozen veggies; let simmer for another 10 minutes or until they are tender.

4. Serve with shredded cheese, mustard, ketchup, pickle slices or whatever you like to put on your cheeseburgers.

This is now my kiddos’ favorite soup. :-)

It’s been a crazy couple of weeks here. I was in a minor car accident about 2 weeks ago & the recovery is taking longer than I thought. Lots of resting & Chiropractor appointments. But, thankfully, I’m starting to feel better. My family has been very supportive & helpful through the whole thing, but I still feel a bit behind the eight ball. So I’m going to make this short & sweet! E meal & S meal recommendations are based on the book Trim Healthy Mama.

Monday – Baked Cod, Rice, & Broccoli
For E meal – Decrease butter to 2 tsp.
For S meal – No rice & lots of butter :-)

Tuesday – Tacos/Taco Salads
For E meal – Use ground turkey/chicken for the taco meat, no dairy or other fats, no taco shells or tortilla chips, add beans
For S meal – Use ground beef for taco meat, can use dairy but no beans, again no taco shells or chips

Wednesday – Italian Chicken, Green Beans, & Potatoes
This will have to be an S meal because the chicken is marinated in a no sugar added Italian Dressing. No potatoes & add butter or Italian Dressing to the green beans

Thursday – Black Bean Dump Soup
E meal

Friday – Beef Stir Fry with rice
S meal – Make sauce with coconut oil or butter, no sugar; no rice
E meal – use chicken, use only a small amount of oil/butter, small amount of rice

Saturday – Hamburgers, Corn & Salad
S meal – No bun or corn, good olive oil dressing on the salad
E meal – Turkey burger, use egg white to bind the turkey together, corn or plan approved bun

Sunday – Sloppy Joes, corn, green beans
S meal – use ground beef, no sugar added sloppy joe sauce, no corn, use butter/oil on the green beans
E meal – use ground chicken/turkey, no sugar added sloppy joe sauce, small amount of corn, no oil/butter on the green beans

If you need to add a little more to your meal, you can always add a FP like 0% fat Greek Yogurt with a handful of berries & sweetened with stevia
For S meals you can add a Muffin in a mug like THIS or THIS.

It all started with Gingerbread Friends by Jan Brett.

We borrowed it from the library, which lead us to a fun sensory experience.

And since there’s a recipe in the book for Gingerbread cookies, we ended up making Gluten Free Ginger Molasses Cookies for our church potluck.

Needless to say, even though the cookies are gluten free, they are a Trim Healthy Mama no-no. Big time fat & carb collision!

Hello there!

This is my first post since before the Holidays & I’m anxious to see how everyone did with all the temptations out there. Let’s just say that I could’ve done a whole lot worse.

We had family in town for Christmas, then I did some traveling for New Year’s. We also had my Dad come & stay after New Year’s for a bit. He just left yesterday which means I’m getting back to my Trim Healthy Mama life style. I found myself thinking that next year should be totally different. Next year I should be so used to the lifestyle that I won’t have to even think about what to eat. It’ll just come naturally. Right?

On to my recipe… I made Pizza Casserole for the kids last night & decided to make a Pizza Salad for myself while the casserole was in the oven. You see, my Dad closed down his pizza shop on New Year’s eve. Therefore, my freezer is full of pizza sausage, pepperoni, mozzarella cheese, pizza sauce… You get the picture? Pizza Casserole only made sense. :-)

Here are the fixin’s for the salad…

Lettuce, purple cabbage, green onion, green & black olives, tomato, pepperoni, canadian bacon, mozzarella, & caesar dressing. What? How did that wine get in the picture? ;-)

Happy Tuesday to you!

I have been struggling along with Trim Healthy Mama for quite some time now. I really have a problem “following the rules.” And I know this is not a diet, but a change of lifestyle. Yet I still cave to temptations that are no good for me. Therefore I’ve been yo-yoing back & forth with no real weight loss. Every once in a while I would hint at my husband that maybe he could read THM & give me his thoughts on it, maybe help me figure it out better. And he meant to do it, but there are just so many other things he needs to do.

Then he decided that he wanted to read it & maybe try it. So he read it over Thanksgiving break & got serious about it! I watched him be faithful to the program the first week & it inspired me to try harder too. He’s lost about 7 lbs & I’ve lost 2 & 1/2! Those numbers may not seem very big to you, but they are a great start!

So this is my plan for the week following THM.

My Dad is so funny. He’s worked in a restaurant his whole life and has never owned a Crock Pot. Until this year. I’ve never seen him so excited about a kitchen appliance. Now that he’s figured out how to use email he’s been asking me to send him recipes to try in his Crock Pot. Then he asks me if there’s a such thing as a Crock Pot cookbook.

:-)

I now have 6 Crock Pot cookbooks on reserve from our library to check out. Guess what will be on the menu for next week!

As for this week…

MONDAY – (M cooks) Honey Garlic Pork Chops, Applesauce, and salad

TUESDAY – (P cooks) Stir fry and Rice

WEDNESDAY – (M cooks) Scalloped Potatoes and Ham with cut veggies

THURSDAY – (M cooks) White Bean & Sausage Soup with cut veggies

FRIDAY – (P cooks) Brinner

SATURDAY – (S cooks) Beef Ragu with noodles and a salad (perhaps a Muffin in a Mug for dessert)

SUNDAY – Chili with noodles

On to the menu plan for the week…

MONDAY – (M cooks) Tacos (THM taco salad)

TUESDAY – (C cooks) Garlic Basil Cod, rice, broccoli & pomegranates (THM no rice)

WEDNESDAY – (M cooks) Sausage, potatoes & green beans (THM sausage, green beans & salad)

THURSDAY – (M cooks) Tuscan Chicken Soup (THM – will skip the bread bowls & cook up some pasta for everyone else to add to their soup)

FRIDAY – (C cooks) Cheeseburger Pie with potatoes (THM – no potatoes, but perhaps a Muffin in a Mug)

SATURDAY – (S cooks) Easy Breakfast Casserole & Breakfast Cake (Mom will help with the cake) (THM Eggs & probably some Strawberry Cheese Cake Mousse

SUNDAY – (E cooks) Mini Meatloaves, potatoes & salad (THM no potatoes)
