What a week we’ve had here. Our church sent a mission team to Haiti last Saturday and they just got back. After hearing a little bit of their stories and all of the starving children, my meal planning seems so unimportant. I plan out our meals so that I don’t have to think about what we’ll eat throughout the week. The people down there don’t know if they’ll eat every single day. Our church does pack meals to help them, but we’re not packing as many as they need. *sigh*
Any ways… on to the plan for this week. I’m also planning a 40th birthday party for my hubby, so I made my menu super easy allowing me a chance to make things that I can freeze for the party.

*From the freezer
Taco Pie – I received this from my friend Denise at our monthly meal exchange.
Sauce and MB – When I make these, I make them a month at a time. I freeze the sauce in portions and the MB in portions. Then I just toss them in my crock pot together to heat up.
Personal Pizzas – I make a large batch of pizza dough, portion it out into 16 oz. balls, then freeze. This week when I make the pizzas I’ll cook up a bunch of Italian sausage and freeze it in portions for future use.
**For the freezer
Chicken Soup – I’ll be using the leftover chicken from our roast last week. And while I’m putting together my soup I’m going to make 2-3 freezer kits of chicken soup. All I will need to do is add the chicken when it’s time to toss it in my crock pot. 🙂
Peachy Pork – I’m going to buy a hunk of pork tenderloin from Sam’s club for this and slice it up. I’ll use some for my meal that night and make 2 more simple freezer meals with the rest of the meat. (Going to a funeral this day, so I may just get the meat sliced and portioned into freezer bags.)
Pot Roast – I’ll chop and freeze the leftover meat to use in beef barley soup next week.
OK, did you get all that? 😀 I heard an interior designer say something profound last week. “Whatever project you’re planning… calculate the time you think it’ll take then multiply times 3. That’ll be the correct amount of time it’ll take you.” I still haven’t learned that with my meal planning. :-O No doubt this won’t all get done this week, but we’ll see what actually DOES get done. 🙂
