Meal planning and watching the Olympics here. It’s going very slowly. 😀 My husband made a witty comment today. He said, “You know those ‘Football Widow’ t-shirts? I should get one that says ‘Olympics widower.'” Yeah, it’s that bad. 😉 Do you have a favorite Olympic sport?
Any ways… on to this week’s menu plan. Oh wait… I’ve got to share my favorite meal from last week. Definitely the Fish en Papillote. I’m trying to turn my kids & myself into a fish lovin’ family (my hubby already loves it). This recipe certainly helped. It’s so yummy! You have to try it.
And now we’re on to the menu plan…
Pancake Sandwiches – use the apple cutter to cut these up 🙂
Leftovers from M-Th nights for school lunches
TGIFriday’s Black Bean Soup
M-Chicken Fried Rice, Egg Rolls, w/ Sweet & Sour Cucumbers
Tu-Pasta Sauce & Meatballs w/ broccoli
W-Orange Balsamic Glazed Chicken w/ rice and Asian veggies
Th-Pizza (ds wants to use his book-it coupon from school) 😉
Sa-Brown Sugar Chicken w/ brown rice and veggies *side note-I don’t have the lemon-lime soda, but I do have a pina colada malt beverage in the fridge. Going to try a little substitution. 😉
Su-Fish Tacos!!! (I can’t wait!)
Lots of rice this week. Hope the kids don’t mind. They have President’s day off so I thought we would go through our old crayons and make some new ones. And they might also help prep the apple crisp and Everything Cookies.
I’ll write more about my Raw Food journey in a different post. But if you’re looking for more menu ideas (like approximately 4-500) then head over the I’m an Organizing Junkie for her Meal Plan Monday post. Lots of great ideas there.
Thanks for stopping by!
