Lazy Granola

We don’t buy cold cereal anymore. It’s just too processed and bad for your body to process, so I stopped buying it. But homemade granola? That’s a completely different story. 🙂

I took 2 recipes (this one & this one) and fused them together to come up with the one I make.

Antoinette’s Lazy Granola
4 cups rolled (not quick) oats
2 cups shredded coconut
2 cups chopped almonds (I chop mine in the food processor)
1 tsp cinnamon
1/4 cup butter
1/4 cup oil (canola or coconut work well)
1/2 cup honey
2 tsp vanilla

Preheat oven to 375 degrees.
Melt butter; add oil, honey, & vanilla & mix well.
Put oats, coconut, almonds, & cinnamon in large bowl & mix well.
Pour honey mixture over oats and mix well to coat.
Spread everything in a Jelly Roll pan.
Bake for 10 minutes; take out and stir.
Return pan to oven & turn oven off.
Pull the granola out when you wake up in the morning. It’s perfectly brown, crunchy, & yummy!
