Menu Plan Monday – September 20, 2010

Anyone else have a crazy schedule right now? We started up homeschooling again this year (after almost 2 years of private school). I’ve been changing my eating habits a lot in the past six weeks, so menus have been hard. However, I’m getting a new cookbook Tuesday that has only whole food recipes in it. I’m looking forward to trying out new recipes! In the meantime, this is what I’m making to keep things simple…

Breakfast:
Lazy Granola
Baked Oatmeal (I double the recipe except for the sugar. I also use honey or sucanat in place of the sugar.)
Ezekiel English Muffins
Various Fruit

Lunch:
Leftovers
Egg salad on pitas
Pita Pizzas
Chicken salad wraps
Lots of carrots & spinach. 😉

Dinner:
Taco Lasagna (I use about half the cheese) w/ peas
Beans & Rice w/ broccoli
Fish Tacos w/ leftover beans & rice + Broccoli & Cauliflower
Dump Swiss Steak w/ sweet potatoes & green beans
Roast Chicken w/ squash & peas
Chicken Soup w/ cheese quesadillas
Spaghetti & MB w/ broccoli (& zucchini noodles for Mom) 😉

We’ll see how that goes. I pray that you are able to enjoy the people in your life this week & be less stressed about cooking. 😉 Take care.
