Menu Plan Monday – July 8th, 2013

Did everyone have a great Independence Day? We really did this year.

We went to the 4th of July parade & came home with a TON of candy!

Unfortunately, that was a disaster for my youngest. Poor thing got so bit up that I had to take him back to Grandpa’s house & then go back to pick up the rest of the family the next day. Oh well, at least we were had that option available.

On to this week’s menu plan.

Breakfasts will consist of fruit, oatmeal, eggs, and smoothies(like the chocolate popsicle only, not frozen.) 😉 Mom’s smoothies are chocolate protein & orange raspberry.

Lunches will consist of fruit, rice cakes with toppings, corn thins with toppings, Rudi’s GF bread with toppings, cut veggies, and soups like: Beef Barley, Broccoli cheese (minus the potatoes), & Thai chicken soup.

Dinners…
Monday – I made quite a large pot of Beef Barley soup for lunch so we had plenty left over for dinner. I added some cabbage, substituted tomato paste for diced tomatoes, used a full pound of beef, & used beef broth instead of beef bouillon & water.

Tuesday – Grilled Chicken, rice, & broccoli. Still want to try these Broccoli Bites.

Wednesday – Burgers with German cucumber salad, corn & Raspberry Fool.

Thursday – Tuna cakes with lettuce & tomato, & fruit. We may follow with some luscious lemon yogurt or lemon poppyseed muffin in a mug .

Friday – Chili Rellenos Casserole with lettuce & tomato. Possible dessert options: Coconut Crack bars or Raspberry Lemon Swirl Bars.

Saturday – Red Beans & Rice with Summer cucumber salad. (We’re a cucumber lovin’ family!)

Sunday is usually pretty low key. We either take care of leftovers or forage (or eat at The Gate). Gotta take a day to rest. 🙂
