We had VBC last week so there was no menu plan. And let me tell you, I ate terrible! Back to a menu plan!
What’s for dinner…
Monday – Tuna Pasta Salad (using quinoa macaroni) with Oranges
Tuesday – Grilled Chicken with either rice or corn & veggies
Wednesday – Spaghetti Pie (using gluten free noodles) with a salad
Thursday – Homemade Chipotle bowls using leftover chicken from Tuesday (Though I’m not sure there is going to be left over chicken with the way these kids are growing!)
Friday – Gluten Free Shortcakes & eggs with fruit
Saturday – The kids have their Bible Bee on Saturday & I’m still trying to come up with a special dinner for them. I know for sure that I’m making this Inside Out Apple Pie ala Mode. Perhaps that’s all we need? 😉
Sunday – Possibly Creamy Roasted Red Pepper, Sausage & Cauliflower Soup.
We had Cheese Tortellini Soup last Sunday & it was so nice to be able to throw something simple together for Sunday evening. I have a feeling this is going to become a habit. 🙂
My menu basically consists of what I’m going to feed the family. I’m still trying to get the hang of Trim Healthy Mama, but not having success. I know part of it is that I’m not making the time to figure out what I’m going to eat each day. When I do that & take the time to pull it all together the night before, I do so much better. Since it is fresh on my mind, I’m going to do it tonight! Now you need to hold me accountable to make sure I did it. Feel free to poke me. 🙂 And if anyone has any advice on how I can get on the right path with THM, please let me know. It seems to be hard for me to feed my family & then figure out what I’m going to eat. Any ways…
