I love me some Muffin in a Mug. And I tell you what, they are really filling! If you are hitting that afternoon wall & want to start eating everything in sight, you need to try one of these. There are so many versions out there like… Lemon Poppy Seed, Chocolate, Coconut Macaroon, peanut butter, Fudge Brownie, Zucchini… oh heck, you should just check out my Pinterest THM Desserts board. I wanted to share my version with you today…

At least that’s what my daughter thinks. Here’s how I make the chocolate chip version (raspberry almond to follow)…

1. Melt 1 TB coconut oil in a microwave safe bowl/mug.

2. Add to bowl: 2 TB flaxseed meal, 1 & 1/2 TB almond meal, 3/4 tsp stevia, 1/2 tsp baking powder, shake or 2 of salt, a splash of vanilla, & 1 slightly beaten egg.

3. Mix that all together like mad until it becomes nice & fluffy.

4. At this point I like to sprinkle it with 1/2 TB of mini chocolate chips. That will add 4.5 g of carbs.

5. Microwave this for a minute & let cool (if you can).

Of course, it's even better with a little bit of whipped cream. ;-)

The raspberry almond is very similar. Instead of a splash of vanilla use a splash of almond extract.
And instead of chocolate chips use frozen raspberry pieces, like this…

    I bet it would also be good with broken up pieces of THM Skinny Chocolate in there in place of the real chocolate chips. Thanks for the recipe!

    I am new to THM and was very skeptical to the muffin in the mug due to my slight egg aversion. I’m trying to get over it and this was the perfect meal to try. Delicious. I didn’t have flax to I used more almond meal and less chocolate chips and added cinnamon. I loved it. Thank you!
