It all started with Gingerbread Friends by Jan Brett.
We borrowed it from the library, which lead us to a fun sensory experience.
Needless to say, even though the cookies are gluten free, they are a Trim Healthy Mama no-no. Big time fat & carb collision!
That got me to thinking that I could easily make a gingerbread muffin in a mug, right? But before I ventured out on my own I decided to check the THM “In a Mug” Variations Pinterest Board.
I’m learning that I need to keep these on hand for those times when I am tempted to start eating junk. They are a simple base of the dry ingredients, then I add the liquid ingredients, egg, or other spices I need when I want to make one. Since Gingerbread is my currently my favorite, I have the spices in the little portion cups.

Here are the rest of the ingredients for the Gingerbread…
1 TB butter, melted
1/2 tsp molasses
1 TB hot tap water
1 egg, beaten
1/2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp ground cloves
When it comes time to make the muffin, I melt 1 TB of butter or coconut oil in a microwave safe bowl. Oops, maybe I should call it muffin in a bowl?
Mix in the molasses & hot water. Stir well to combine. Add in the egg & mix really well.
Add dry ingredients plus spices & beat the tar out of it.
Microwave for 45-60 seconds depending on your microwave & what type of container you use. Since I use a flat bowl it only takes about 50 seconds.
It’s the perfect sized snack for you or to split if you toddler notices that you made one & asks for one too. 🙂
On another note, I’m happy to say that I reached my first weight loss goal. I realized that I kept focusing on my ideal weight instead of making baby steps. So I decided to set smaller goals. Looks like I need to set another one!
