{Wildtree Wednesday} Italian Medallions

Last week I talked a little bit about the Freezer Meal Workshops that I’m starting to host once a month. I’m so happy about how tasty the meals are. And the best part is that my kiddos love them, too. Win, win!

Today I'm going to share the recipe for Italian Medallions... it's so easy!
Today I’m going to share the recipe for Italian Medallions… it’s so easy!


2 pounds of chicken tenders (I used chicken breasts cut into tenders size)
1 Tablespoon of Wildtree Italian Salad Dressing Mix
1 Tablespoon of Wildtree Roasted Garlic Grapeseed Oil
1 Tablespoon of Wildtree Zesty Lemon or Basil Pesto Grapeseed Oil (I had the Lemon on hand but I’m so curious to try the Basil Pesto)

Mix all ingredients in a freezer bag. Remove air and either marinate 2 hours or freeze. Defrost bag in
fridge. Grill, bake at 350, or pan fry until cooked thoroughly. Serve with rice, and grilled or roasted
veggies. OR, for a lighter fare, serve over lettuce as a salad. Serves 6.
