Happy St. Paddy’s Day to all you Irish folk out there! My son told me ON FRIDAY that he wanted to go to Chicago to see the green river TODAY. Needless to say, that’s in the works for next year. 😉

Moving along to the menu plan…

SUNDAY – Leftovers

MONDAY – Spanish Style Garlic Chicken (SIMILAR RECIPE), rice, & green beans (though THIS SOUP would be a good selection, no?)

TUESDAY – Chipotle Lime Fajitas with all the fixin’s (recipe to be posted Wednesday)

WEDNESDAY – Waffles, eggs, & Fruit (we are gluten free, but I use THIS BREAD STARTER to make bread & waffles)

THURSDAY – Possibly some sort of Stir Fry with rice

FRIDAY – Possibly Sloppy Joes or Chicken Sausage, Perogies, & Green Beans (Just me & my 2 youngest to feed)

SATURDAY – Leftovers (again, only 3 of us to feed)

Since Greek yogurt has a good amount of protein & I’m not usually up for making eggs in the morning, that’s going to be my go to. I went straight to my Overnight Oats pin and made the following three versions: Blueberry (with Stevia instead of Maple Syrup), Apple Cinnamon (again with Stevia), & Raspberry Vanilla (again with Stevia)

While I was on The Yummy Life web site, I was happy to come across her post for Healthy Breakfast Bread Pudding. Immediately I thought of making some muffins in mugs & topping with Greek yogurt.

I had to split 1 recipe in half or it would have oozed out of the Mason jar & all over the microwave. Yuck. (Click picture for Gingerbread in a Mug)

So I’m off to try out my Bread Pudding. I’ll let you know how that turned out!

[UPDATE: The “Bread Pudding” was really good. It didn’t taste like bread pudding to me, probably because I didn’t use her recipe. But I’m not going to complain about Gingerbread with a cream cheese like yogurt frosting. And since I split my Muffin in a Mug recipe in half, it wasn’t very filling. I had to eat two. Bummer, eh?
The overnight oats didn’t last long for me. I didn’t get to them until day 3 and they tasted fizzy. 😛 So I guess I will only make them the night before.]
