Hi all! I’m running a little behind on my posts, so I’m going to get straight to the point here.
Dinners for the week…

MONDAY – Ranch Chicken Chili (from the freezer to the crockpot) and Corn Bread (recipe to come)

TUESDAY – Fajita Bowls

WEDNESDAY – Cheesy Chicken Tenders and Potato Pockets (recipes to come)

THURSDAY – Popcorn Shrimp and Dilled Cod with rice and veggies

FRIDAY – Easy Crockpot Lasagna (from the freezer to the crockpot – recipe to come)

SATURDAY – Brinner! (Pancakes, Eggs, and Bacon)

Sunday – Leftover Buffet or something simple

Aaaaand it’s almost February. Yep, that happened. Moving right along, here’s the dinner plan for the week…

MONDAY – Pollo Asada Rice Bowls (from the freezer to the crockpot)

TUESDAY – Red Lentil Soup with some fruit

WEDNESDAY – Honey Hoisin Chicken Wraps (from the freezer to the crockpot)with Apple Balsamic Slaw and Pitas

THURSDAY – BEEF ENCHILADA STEW (from the freezer to the crockpot) with Rice Cakes and Laughing Cow

FRIDAY – Eating at a 10th Anniversary school event

SATURDAY – Brinner! Gluten Free Pancakes with Eggs, Bacon, and fruit

SUNDAY – Cheesy Chicken Tenders with Bacon <a href="http://www.mywildtree.com/PWS/Antoinette/store/AM/product/CREAMY-RANCH-DRESSING-DIP-MIX,1621.aspx”>Ranch Packet Potatoes, and Peas

What, it’s not Monday? Oh well… I haven’t posted a menu in a LONG time, so one more day won’t hurt. Here it goes…

Simply posting dinners this week.

MONDAY – Hawaiian Style Country Ribs (from the freezer to the crock pot) with cornbread, and mixed veggies

TUESDAY – Slow Cooker Adobo Chicken with rice

WEDNESDAY – Honey Hosin Chicken Wraps (from freezer to the crock pot) with fruit salad

THURSDAY – Beef Stir Fry with rice
We already have the steak in the freezer marinating in soy sauce. I wonder if we could still try to make this Mongolian Beef instead …

FRIDAY – Very belated birthday party with Pizza, Cake, and Ice Cream. ๐Ÿ˜‰

SATURDAY – Pancakes, Eggs, Bacon, and Oranges

And the boys are starting back to school this week, after having 3 weeks off. It’s amazing how quickly I get used to having them home. *sigh*

SUNDAY – Chicken Adobo, rice, & broccoli

MONDAY – Meatloaf, corn, & peas

TUESDAY – Chili with gf noodles, & cut veggies

WEDNESDAY – Eggs, fruit, & Waffles (using this bread starter)

THURSDAY – Cheeseburger Soup & cut veggies

FRIDAY – Fish Fry & Pie ๐Ÿ™‚

SATURDAY – Roast Chicken, Home Fried Potatoes, & green beans

As I sit here looking out the window at nothing but white, I’m grateful that I do not have to take any kids to school today. Oy! If we get any more snow, the drifts at the end of my driveway will be so big that I won’t be able to see to get OUT of the driveway! I’ll be stuck here until spring! There is hope. I do see higher temperatures later this week. ๐Ÿ™‚

Onto the Menu Plan…

MONDAY – Crock Pot Coq au Vin with gf noodles, and bell pepper strips

TUESDAYLentil Soupย with raw, cut veggies

WEDNESDAY – Tacos/Taco Salads

THURSDAY – Using up some chicken strips from the freezer, served with mashed potatoes & mixed veggies

FRIDAY – Homemade Pizza (Going to try making some pizza crust with my new Bread for Life Starter. We’re hoping that this will be able to replace some of our gluten free items. Will keep you posted as to our results.)

SATURDAY – Cheeseburger Soup (recipe to follow based on THIS recipe)

SUNDAYEasy Breakfast Casserole with Waffles (using Bread for Life Starter) & fruit

Here’s my CHEESEBURGER SOUP recipe:

1 lb ground beef

1 lb ground turkey

6 oz potatoes, peeled & diced

1 c chopped cauliflower

1 c chopped onions

1 c chopped celery

2 c chopped cabbage

1 c frozen green beans

1 c frozen peas

4 – 6 c water

1 can tomato sauce

1 c diced tomatoes, processed to break up tomato chunks

1 bay leaf

1/2 tsp each basil & thyme

salt & pepper to taste

1. Brown beef & turkey in dutch oven; drain fat.

2. While meat is browning chop veggies. (I love using my Progessive Fruit and Vegetable Chopperย for this)

3. Add everything (except for frozen veggies)ย to the pot & bring to boiling. Reduce heat to low & simmer 1-4 hours.

4. Before serving remove your bay leaf & add your frozen veggies; let simmer for another 10 minutes or until they are tender.

4. Serve with shredded cheese, mustard, ketchup, pickle slices or whatever you like to put on your cheeseburgers.

This is now my kiddos’ favorite soup. ๐Ÿ™‚

Menu Plan Monday – February 3rd, 2014

It’s been a crazy couple of weeks here. I was in a minor car accident about 2 weeks ago & the recovery is taking longer than I thought. Lots of resting & Chiropractor appointments. But, thankfully, I’m starting to feel better. My family has been very supportive & helpful through the whole thing, but I still feel a bit behind the eight ball. So I’m going to make this short & sweet! E meal & S meal recommendations are based on the book Trim Healthy Mama.

Monday – Baked Cod, Rice, & Broccoli
For E meal – Decrease butter to 2 tsp.
For S meal – No rice & lots of butter ๐Ÿ™‚

Tuesday – Tacos/Taco Salads
For E meal – Use ground turkey/chicken for the taco meat, no dairy or other fats, no taco shells or tortilla chips, add beans
For S meal – Use ground beef for taco meat, can use dairy but no beans, again no taco shells or chips

Wednesday – Italian Chicken, Green Beans, & Potatoes
This will have to be an S meal because the chicken is marinated in a no sugar added Italian Dressing. No potatoes & add butter or Italian Dressing to the green beans

Thursday – Black Bean Dump Soup
E meal

Friday – Beef Stir Fry with rice
S meal – Make sauce with coconut oil or butter, no sugar; no rice
E meal – use chicken, use only a small amount of oil/butter, small amount of rice

Saturday – Hamburgers, Corn & Salad
S meal – No bun or corn, good olive oil dressing on the salad
E meal – Turkey burger, use egg white to bind the turkey together, corn or plan approved bun

Sunday – Sloppy Joes, corn, green beans
S meal – use ground beef, no sugar added sloppy joe sauce, no corn, use butter/oil on the green beans
E meal – use ground chicken/turkey, no sugar added sloppy joe sauce, small amount of corn, no oil/butter on the green beans

If you need to add a little more to your meal, you can always add a FP like 0% fat Greek Yogurt with a handful of berries & sweetened with stevia
For S meals you can add a Muffin in a mug like THIS or THIS.
