{Wildtree Wednesday} Italian Medallions

Last week I talked a little bit about the Freezer Meal Workshops that I’m starting to host once a month. I’m so happy about how tasty the meals are. And the best part is that my kiddos love them, too. Win, win!

Today I'm going to share the recipe for Italian Medallions... it's so easy!

Gingerbread in a mug

It all started with Gingerbread Friends by Jan Brett.

We borrowed it from the library, which lead us to a fun sensory experience.

And since there’s a recipe in the book for Gingerbread cookies, we ended up making Gluten Free Ginger Molasses Cookies for our church potluck.

Needless to say, even though the cookies are gluten free, they are a Trim Healthy Mama no-no. Big time fat & carb collision!

Trim Healthy Pizza Salad

Hello there!

This is my first post since before the Holidays & I’m anxious to see how everyone did with all the temptations out there. Let’s just say that I could’ve done a whole lot worse.

We had family in town for Christmas, then I did some traveling for New Year’s. We also had my Dad come & stay after New Year’s for a bit. He just left yesterday which means I’m getting back to my Trim Healthy Mama life style. I found myself thinking that next year should be totally different. Next year I should be so used to the lifestyle that I won’t have to even think about what to eat. It’ll just come naturally. Right?

On to my recipe… I made Pizza Casserole for the kids last night & decided to make a Pizza Salad for myself while the casserole was in the oven. You see, my Dad closed down his pizza shop on New Year’s eve. Therefore, my freezer is full of pizza sausage, pepperoni, mozzarella cheese, pizza sauce… You get the picture? Pizza Casserole only made sense. ๐Ÿ™‚

Here are the fixin’s for the salad…

Lettuce, purple cabbage, green onion, green & black olives, tomato, pepperoni, canadian bacon, mozzarella, & caesar dressing. What? How did that wine get in the picture? ;-)

Happy Tuesday to you!

I have been struggling along with Trim Healthy Mama for quite some time now. I really have a problem “following the rules.” And I know this is not a diet, but a change of lifestyle. Yet I still cave to temptations that are no good for me. Therefore I’ve been yo-yoing back & forth with no real weight loss. Every once in a while I would hint at my husband that maybe he could read THM & give me his thoughts on it, maybe help me figure it out better. And he meant to do it, but there are just so many other things he needs to do.

Then he decided that he wanted to read it & maybe try it. So he read it over Thanksgiving break & got serious about it! I watched him be faithful to the program the first week & it inspired me to try harder too. He’s lost about 7 lbs & I’ve lost 2 & 1/2! Those numbers may not seem very big to you, but they are a great start!

So this is my plan for the week following THM.

SUNDAY night I made this…

Creamy Cauliflower Soup {Trim Healthy Tuesday}

Soup. I love soup. I have acclimated my children to love soup because I love it so much. It’s definitely one thing I look forward to when the weather turns cold. Warm drinks & hot soup. Mmmmm

The recipe I’m sharing today is Cream of Cauliflower Soup. It’s very similar to the Loaded Fotato Soup in the Trim Healthy Mama book.

Doesn’t Loaded Fotato Soup sound so much better? Kudos to Pearl for coming up with that. ๐Ÿ™‚

CREAMY CAULIFLOWER SOUP

Ingredients:
1 Head of cauliflower, cut up
1/4 c chopped onion
1 stalk of celery, chopped
1 – 2 cloves of garlic
4 – 6 cups of chicken broth
1/4-1/2 tsp salt
pinch of pepper
2 wedges of Laughing Cow Swiss Cheese or cream cheese
a wee bit of Worcestershire Sauce (optional)

Garnishes:
sour cream
green onions
crumbled bacon (the real thing)

Directions:
Add cauliflower, onion, celery, garlic and chicken broth to a 3 quart saucepan. Bring to boil, reduce heat & let simmer until veggies are soft enough to blend.

Once veggies are soft add to a large Magic Bullet cup with a bit of the broth and the cheese. Don’t overfill! Pulse until nice & smooth. (At this point you could also pulse in some xanthan gum or glucomannan to thicken it up.)

Return to saucepan and mix with remaining broth. Then add your salt, pepper, and Worestershire to taste.

Ladle into a bowl, add your toppings and enjoy!

I eat this as an S meal because I love me some bacon!

How about you, do you love soup… hate it?

Thanks for stopped by today.
Antoinette

Creamy Warm Chai Smoothie -S- {Trim Healthy Tuesday}

There’s frost on our car this morning. Yep.

So I’m done with icy cold drinks and on to warm tea for the next couple of, several months.

One of my favorite drinks over the summer has been The Shrinker which was posted on Trim Healthy Mama’s fb page. I would make this, add it to a quart sized jar, fill it with ice and sip on it all morning.

But I don’t want to think about ice right now unless it’s to put in my son’s steaming hot soup.
