Menu Plan Monday – February 3rd, 2014

It’s been a crazy couple of weeks here. I was in a minor car accident about 2 weeks ago & the recovery is taking longer than I thought. Lots of resting & Chiropractor appointments. But, thankfully, I’m starting to feel better. My family has been very supportive & helpful through the whole thing, but I still feel a bit behind the eight ball. So I’m going to make this short & sweet! E meal & S meal recommendations are based on the book Trim Healthy Mama.

Monday – Baked Cod, Rice, & Broccoli
For E meal – Decrease butter to 2 tsp.
For S meal – No rice & lots of butter ๐Ÿ™‚

Tuesday – Tacos/Taco Salads
For E meal – Use ground turkey/chicken for the taco meat, no dairy or other fats, no taco shells or tortilla chips, add beans
For S meal – Use ground beef for taco meat, can use dairy but no beans, again no taco shells or chips

Wednesday – Italian Chicken, Green Beans, & Potatoes
This will have to be an S meal because the chicken is marinated in a no sugar added Italian Dressing. No potatoes & add butter or Italian Dressing to the green beans

Thursday – Black Bean Dump Soup
E meal

Friday – Beef Stir Fry with rice
S meal – Make sauce with coconut oil or butter, no sugar; no rice
E meal – use chicken, use only a small amount of oil/butter, small amount of rice

Saturday – Hamburgers, Corn & Salad
S meal – No bun or corn, good olive oil dressing on the salad
E meal – Turkey burger, use egg white to bind the turkey together, corn or plan approved bun

Sunday – Sloppy Joes, corn, green beans
S meal – use ground beef, no sugar added sloppy joe sauce, no corn, use butter/oil on the green beans
E meal – use ground chicken/turkey, no sugar added sloppy joe sauce, small amount of corn, no oil/butter on the green beans

If you need to add a little more to your meal, you can always add a FP like 0% fat Greek Yogurt with a handful of berries & sweetened with stevia
For S meals you can add a Muffin in a mug like THIS or THIS.

It all started with Gingerbread Friends by Jan Brett.

We borrowed it from the library, which lead us to a fun sensory experience.

And since there’s a recipe in the book for Gingerbread cookies, we ended up making Gluten Free Ginger Molasses Cookies for our church potluck.

Needless to say, even though the cookies are gluten free, they are a Trim Healthy Mama no-no. Big time fat & carb collision!

Happy Tuesday to you!

I have been struggling along with Trim Healthy Mama for quite some time now. I really have a problem “following the rules.” And I know this is not a diet, but a change of lifestyle. Yet I still cave to temptations that are no good for me. Therefore I’ve been yo-yoing back & forth with no real weight loss. Every once in a while I would hint at my husband that maybe he could read THM & give me his thoughts on it, maybe help me figure it out better. And he meant to do it, but there are just so many other things he needs to do.

Then he decided that he wanted to read it & maybe try it. So he read it over Thanksgiving break & got serious about it! I watched him be faithful to the program the first week & it inspired me to try harder too. He’s lost about 7 lbs & I’ve lost 2 & 1/2! Those numbers may not seem very big to you, but they are a great start!

So this is my plan for the week following THM.

I’ve been keeping a couple of these salads in a jar in my fridge. And let me tell ya, they are so handy! (Blog Post to come!)

On to the menu plan for the week…

MONDAY – (M cooks) Tacos (THM taco salad)

TUESDAY – (C cooks) Garlic Basil Cod, rice, broccoli & pomegranates (THM no rice)

WEDNESDAY – (M cooks) Sausage, potatoes & green beans (THM sausage, green beans & salad)

THURSDAY – (M cooks) Tuscan Chicken Soup (THM – will skip the bread bowls & cook up some pasta for everyone else to add to their soup)

FRIDAY – (C cooks) Cheeseburger Pie with potatoes (THM – no potatoes, but perhaps a Muffin in a Mug)

SATURDAY – (S cooks) Easy Breakfast Casserole & Breakfast Cake (Mom will help with the cake) (THM Eggs & probably some Strawberry Cheese Cake Mousse

SUNDAY – (E cooks) Mini Meatloaves, potatoes & salad (THM no potatoes)

How’s everybody doing this week? We’re looking forward to Halloween this Thursday. One of our favorite parts of Halloween is carving pumpkins. Pictures to come!

I love me some Muffin in a Mug. And I tell you what, they are really filling! If you are hitting that afternoon wall & want to start eating everything in sight, you need to try one of these. Menu Plan Monday – June 24, 2013

After a wonderful vacation we are now back to the real world. ๐Ÿ™‚ Here’s my plan for the week… it’s really more of a guideline.

Breakfasts:
Scrambled Eggs, Omelets, Pancakes, lots of fruit.

Lunches:
Mostly leftovers, sandwiches (on Rudi’s GF bread), corn thins & rice cakes with various toppings, cut veggies & cheese

Snacks:
Trail mix, fruit & cheese, muffins in a mug, Greek yogurt with additions, apple snacks, cut veggies.

Dinners:
Crock pot roast chicken with corn & green beans, Fried cabbage with bacon served with GF cornbread, Mini meatloaves with broccoli bites, White bean & sausage soup, Spaghetti pie with mixed veggies, & Crock pot cream cheese chicken chili with gf garlic toast.

Trim Healthy Mam Substitutions to dinners for me: an egg instead of cornbread with the fried cabbage, replacing the breadcrumbs in both the meatloaves & broccoli bites with ground flax, the sausage in the bean soup is low fat chicken, I’ll probably just have leftovers instead of the spaghetti pie, & no garlic toast for me with the chili. ๐Ÿ™‚ I will also be having my Reliv shakes (Now shake & Chocolate shake)

Meal Plan Monday May 27, 2013

OK, so it’s not Monday. However, when we got into town last night all I could think about was getting organized for the week. Meal planning is where I started… and that’s as far as I got. ๐Ÿ˜‰

Tuesday
Breakfast – Leftover Taco Bello (What?! Don’t judge.)
Lunch – Random bits of whatever is in the fridge or freezer (unless I make it to the grocery store first)
Dinner – Pea Soup & maybe some Gluten Free Bread from this Cookbook

Wednesday
Breakfast – Oatmeal (at bottom of post) or Pancakes & berries
Lunch – Pea Soup & bread
Dinner – Sloppy Joes, carrots, & corn

Thursday
Breakfast – Banana Bread Muffins & berries
Lunch – Sloppy Joe leftovers, carrots, & corn
Dinner – These Chicken Pot Pie Poppers sound yummy with some sort of veggies

Friday
Breakfast – Possibly some muffins in mugs like these or these
Lunch – Leftovers (if we have any) or forage through the fridge
Dinner – Pancakes, sausage, & watermelon

Saturday (Huge neighborhood garage sale)
Breakfast – Leftover Pancakes & berries
Lunch – Garage sale food tent
Dinner – sandwiches or take out

Sunday – We have to be at band practice early, so something simple
Lunch – Sandwiches?
Dinner – @ The Gate (if we’re not too worn out)

I will be following the Trim Healthy Mama meal plan along with my Reliv shakes:
Breakfast – Shake of Now, Fibrestore, Innergize, Cellebrate, Vanilla Whey Protein Powder, & berries, 4 oz oj + 12 oz water
Lunch – Shake of SoySentials, Fibrestore, Cellebrate, Chocolate Whey Protein Powder & Silk Almond milk
Snack – Salad in a jar & muffin in a mug
Dinner – Some sort of protein, veggies, fat combo + Lemon Yogurt or other such treat.
